New book correction

Did you get the new book and notice something odd? Our printers messed up and printed page 151 twice, so you're missing page 145. Here's the recipe from that page. Sorry for any inconvenience!


coconut fudge


This is a barely sweet, coconuty fudge. Feel free to add in some shredded coconut or nuts if you like your fudge chunky, and more maple syrup if you want it sweeter. You can also halve the recipe and make it in a loaf pan if you’d prefer. To save money, you can make your own coconut butter if you have a Vitamix (or other high-powered blender). Check out our coconut products page for instructions (page 3).


2 cups coconut butter

1 cup coconut milk

¾ cup raw cacao powder

¼ cup maple syrup

2 teaspoons vanilla

½ teaspoon salt


Melt coconut butter together with the coconut milk. Add the rest of the ingredients and stir until well combined. Spread into a parchment-lined 8 by 8-inch pan and refrigerate for a few hours until solid. Cut into 1-inch squares.


Makes 64 1-inch squares.

We've finally finished all the recipes for our second book. It's even better than the first, and this one has a section with grain-free and super foods for those of you headed in that direction. We hope to have it in stores this summer, so keep an eye out!

Adjustments to muffin recipes

We've found that adding 1 teaspoon of xanthan gum to both the banana muffin recipe and the carrot cake muffin recipe improves the texture and makes them less crumbly.

another egg replacer alternative

We've been playing around with agar powder as an egg replacer and it's working great. Try using 1 teaspoon of agar powder instead of 2 teaspoons of ground flax seed in our chocolate cake recipe. It is even better, because it doesn't add any texture like the flax seed does.
